Developing food and beverage formulations

We regularly work with clients to meet ever-changing consumer demands for new food products, whether that's developing a genuine clean label product, developing product formulations, product modelling methods, a new high-fibre snack, or a ‘lighter’ version of an existing snack with the same organoleptic properties as the original.

Our team manages investigations by innovative research and development, driving consumer-centric needs, developing scientific hypotheses, and rapid ‘proof of concept' testing. We analyse market sentiment and benchmark products with consumers to understand the technical gap and challenge to solve. We quickly and accurately create actionable technical hypotheses, through a structured and thorough investigation of the fundamental scientific principles at play.

We identify the highest priority options, providing detailed explanations and science-led justifications. We then rapidly ‘reduce to practice’ in the laboratory or development kitchen, producing a small number of focussed formulations to test our hypotheses and our unique predictive modelling methods and business strategies can dramatically reduce labour-intensive sensory testing of new recipes, helping clients to reduce the manufacturing cycle time and cost of product development.
